Vietnamese noodles with shrimp

I don't wanna brag, but this super quick Vietnamese style noodle dish is seriously good. If you use a kitchen machine for make the sauce, this dish could be done in 15 minutes. So, take your time and cut it by hand, or go for fast food and use your kitchen machine.

This recipe is enough for 2 people.


Sauce ingredients:

• 2 red chilli peppers • 3 tbsp fishsauce • 2 tbsp sugar • zest of 1 lime • juice of 1½ lime • 1 tbsp finely chopped ginger • 1 garlic clove • handful coriander roots • 4 cherry tomatoes •


Other ingredients:

• shrimp (8 to 10 per person) • glass noodles • handful coriander • handful parsley • handful mint leaves • ½ red onion • ½ cucumber • crispy porkskin snacks (optional) •


1. Start with making your sauce. It you use a kitchen machine, start with the garlic, ginger and chilli pepper. Pulse until you have a nice, slightly rough consistency. Add the other ingredients and pulse a few more times. It's OK it the coriander roots and tomato is still a bit chunky.

2. Cut the other vegetables. Your shrimp and noodles will be finished quickly, so make sure everything is ready to put it all together.

3. Boil the glass noodles and rinse with cold water. Fry your shrimp in a pan with some salt and pepper. Mix the herbs with the onion and cucumber in another bowl.

4. Once everything is ready, mix half of the sauce through the herb mix and half of it through the shrimp. Add the noodles to the shrimp and stir well.

5. Assemble the plates by starting with the marinated noodles. Add a hand full of the marinated herbs and place the shrimp on top together with the crispy porkskin (in Holland this is a snack and you can find it near the crisps or in some supermarkets with luxury crackers near the cheese. This could be different in other countries. It is optional though. If you want another crunch, fried onions are nice as well). The dish is served room temp and is amazing for the summer days.
