Warming potato-beet soup

The days are getting shorter and it's getting colder. If you ask me, that sounds like the soup-season! This one is with beetroot and potato! Ingredients: • 500 gram potato • 500 gram pre-cooked beetroot • 1 liter vegetable broth • 1 onion • 1 tsp. fennelseeds • black pepper • parsley • yogurt • bacon strips (optional) • 1. Cut your onion in bug chunks. Don't worry, it doesn't have to look pretty. Get a soup pan en heat up some oil. Fry your onion with the fennelseeds and black pepper. When the onions start to get golden on the edges, add the vegetable broth.

2. Cut your potato's in small cubes and boil in the broth for about 10 minutes. While the potato's are cooking, bake your bacon strips in another pan. 3. When the potato's are cooked, you cut the pre-cooked beetroot in big pieces and add them to the broth. Boil for another 5 minutes. 4. As soon as everything is cooked, turn off the heat and get your blender. Make sure everything is nice and smooth. Scoop a nice amount of soup in a bowl and add the crispy bacon, parsley and yoghurt. Of course it's super easy to make a vegetarian version. Just don't add bacon 😁 If you made too much, it's super easy to make portions and put it in your freezer. I think this amount of soup will do for 3 to 4 people. It's also very lovely with a nice piece of bread.
