Yellow curry with chicken

Yellow curry with home made curry paste. Find the recipe of the paste in my previous post!
Ingredients (4p):
• home made curry paste • 400 gram chicken • 400 gram mushrooms • baby corn • 1 cup peas • 6 spring onions • thinly slived ginger (1cm total) • 4 lemon leaves in thin strips • salt and pepper • 3 tbsp. dried coconut flakes • 400 ml coconut milk •
1. Heat up some oil and fry your chicken with salt, pepper, the lemon leaves and the thinly sliced ginger. When almost cooked, add the mushrooms and the dark green part of the spring onions. The white and light green parts, you slice thinly to garnish your dish later. 2. When everything is cooked, add the home made curry paste and the dried coconut and cook for a few minutes, so all the spices in the paste are heated up and release their flavour.
3. Add the baby corn and peas. Stir well and add the coconut milk. Let it simmer for a while and that's it! Serve with a lovely fluffy white rice or maybe even with some naan bread!
