Yellow rice with chorizo

Tonight I needed some comfort food that's easy to re-heat for the boyfriend who had to work late. This yellow rice with chorizo sausage and veggies is all those things. It's super easy and tasty!
Ingredients (3p):
• 3 portions rice (loose grain) • 1 liter light vegetable broth • pinch saffron • 200 gram dry chorizo sausage • 1 bell pepper • 1 cup frozen green peas • 1 onion • 3 garlic cloves • 100 gram kale • fresh coriander • 1 lime • 1 jalapeño • 1 tbsp dried oregano • salt and pepper •
1. Start with cooking the rice. Get a large enough pan to boil the vegetable broth with the saffron. As soon as it's boiling, add the rice and cook for 8 minutes. After that, drain the rice and set aside for another 15 minutes with the lid on. It's important you don't use a sticky rice.
2. Cut the chorizo, bell pepper and onion into small pieces, all roughly the same size as the peas. Chop the garlic and jalapeno super fine. If you don't like super spicy, take the seeds out of the jalapeno. If you can't handle spice at all, leave the jalapeño out.
3. Get a large pan and heat up a little bit of oil. As soon as the oil is hot, add the onion and chorizo and start frying. The chorizo will loose some oil. As soon as this happens, add the bell pepper, garlic, jalapeño and peas. Stir and fry for another 5 minutes.
4. Add the oregano and kale together with the cooked rice and stir well. Loosen the rice and make sure everything is mixed well. Taste and add salt and pepper if needed.
5. Finally add the lime juice and chopped coriander. Of course you can leave the coriander out (like my boyfriend will probably do), but it does add a lot of flavour. You could use parsley or spring onions to add an extra dimension to the dish.
Serve with extra pickled chilies or your favorite hot sauce!
It's also great with a nice avocado.
