Pineapple coconut cake

Excuse me for the ugly photo, but I had to be quick, before it was all gone.

🍍 I chopped up Spongebob's house and made a cake. Sorry not sorry! 🍍

It's easy, foolproof and so so tasty!


Ingredients:

• ½ fresh pineapple • 275 gram flour • 3 eggs • 250 ml cream (the unsweetened version you use for whipped cream) • 200 gram sugar • 1 tsp vanilla extract • 15 gram baking powder • 3 tbsp dried coconut flakes • some shaved almonds •


1. Pre-heat your oven at 180°C. Get a baking tray and line it with baling paper and oil. Clean the pineapple and chop into small pieces. Put them in a sieve to get rid of a little bit of the juice.

2. Mix the eggs, sugar and vanilla extract.

3. Mix the flour and baking powder and sift. Add the cream into the egg mixture and the flour and baking powder after that.

4. Mix well. Add half of the chopped up pineapple and 1 tbsp of coconut. Dump the batter into the baking tray and drop the other half of the pineapple on top of it. Garnish with the rest of the coconut and the almonds.

5. Bake for 35 minutes and let cool down completely before getting a slice. It's hard, I know... But it's for the best! It will be crispy on top, airy and a little sticky near the bottom.

Eat as it is or serve with coconut ice cream or maybe even a piñacolada 🥥🍍❤
