Sticky chocolate fudge cake

I saved this recipe a while ago and finally I had some spare time to make it. This Fudge cake is not for the faint hearted. Thank to @yummyph for this chocolate heaven. The only thing I added was some sea salt on top. 🍫


Ingredients:

• 250 gram flour • 1½ tsp baking soda • 1½ tsp baking powder • ½ tsp salt • 400 gram sugar • 2 large eggs • 125 ml vegetable oil • 2 tsp vanilla extract • 100 gram cocoa powder • 250 ml hot water • 220 gram semi-sweet chocolate • 180 ml cream •


1. Pre-heat your oven at 180°C. Start with mixing the flour, baking soda, baking powder, salt and sugar. Sift them if necessary.

2. Mix in the eggs, oil and vanilla. In a separate bowl, mix the cocoa and hot water Once combined well, add the both together until a smooth mixture. It should be easy to mix with a spatula.

3. Grease your cake pan and line it with parchment paper. Add the cake mixture and put I'm the oven for 45 minutes. It's OK if the cake still has a sticky center. Let the cake cool down completely.

4. Get a small sauce pan and put in the cream (I used 35% fat cream, user for whipped cream and such. A low fat content can cause the cream to split, so watch out for that). Heat up really slowly on low heat. Chop the chocolate into small chunks and throw this in the warm cream (it doesn't need to boil, as long as the chocolate melts, you're fine). 5. Once the chocolate is completely co-orporated into the cream, let it cool down and thicken. Once it's back to room temp. add it on top of the cake. Finally add some (optional) salt flakes. You can also add other things like nuts or orange zest.

Best served with a big bowl of vanilla ice cream!
